If it doesn't follow the path, you can nudge your horse with your movement keys/stick and it should "snap" to the path and start following it on its own.

Pretty much man, there's a solution you can try which is to delete 3 files that will be redownloaded on the next launch. Delete the 3 sga files under "C:\Users\\Documents\Rockstar Games\Red Dead Redemption 2\Settings. Once you start up the game again those files will be created and it should work.
